Those who personally know me, know I can’t resist a good theme party and since Adrian’s second birthday fell on a Tuesday, I couldn’t help but throw a Taco TWOsday fiesta!
This was not only such an easy theme it was also a true crowd-pleaser… I mean who doesn’t like tacos?!
We simply threw together a “taco bar” that fed around 30 people, was affordable, and required minimal effort leaving us with plenty of time to socialize and enjoy the fiesta instead of cooking in the kitchen.
For our “taco bar” pictured we used approx. 5.50lbs of ground beef, taco toppings (lettuce, cheese, sour cream, taco sauce, etc. – all purchased in bulk at BJ’s Wholesale), rice and beans for the sides, and of course Margaritas for the adults!
